I may be late to the party, but I have just learned that there IS a way to have fresh salsa during the colder months (and while it may be spring, it is still cold--at least up here in Idaho). I got the recipe from our Relief Society's "Fiesta Night" and I made it this past weekend while my mom was visiting and it is yummy! Here it is for all the rest of you salsa lovers:
1 can diced tomatoes
1/2 bunch of cilantro
1 jalapeno pepper
salt to taste
pepper to taste
minced garlic to taste
drizzle of olive oil
I doubled it so that I could use the whole bunch of cilantro that I had purchased. I put in two jalapenos and at first it tasted a little too spicy for me, but after sitting in the fridge for a few hours, it was much more mild. Play around with it and enjoy!

I'm always up for a new salsa recipe. I'll have to try this one this week since I'm dying for fresh tasting salsa and Pace just doesn't cut it anymore.
p.s. what do you think of Dr. Laura's book?
Aub: I'm not very far into it (I've only read like 2 chapters), but I do find myself agreeing with a lot of what she's saying. Really, it seems that the basic message so far is: respect each other and cut each other some slack, oh, and quit being selfish.

Thanks, I'll have to try it. I have been craving fresh salsa and like Aubrey said Pace doesn't cut it. I am so excited for garden tomatoes. I'll have to give this a try while I wait.
